2nd Wednesday Lecture: The Spirit of Agave in Mexico

For hundreds of years, the agave plant has been feeding and housing rural Mexico. Learn how from Jay Schroeder and Lou Bank, two gringos who spend time in these communities and who have seen how the boom in agave and agave spirits are leaving an imprint on the rural Mexican communities where they are made. They’ll explain how agave is used to make spirits like tequila, mezcal, raicilla, and bacanora, and how the success of those spirits is changing lives in Mexico — sometimes for good, sometimes not so good.

About the Presenters:

Jay Schroeder has helped to popularize mezcal, sotol, and other Mexican spirits in Chicago and the broader USA, first as beverage director for Rick Bayless’ empire of restaurants, later as founder of Mezcaleria Las Flores, and now as a partner at Todos Santos, the agave-focused bar connected to Quiote.

Lou Bank is the founder of S.A.C.R.E.D: Saving Agave for Culture, Recreation, Education, and Development, a non-profit that uses heirloom agave spirits to improve life in rural Mexico.
